Here is a yummy easy recipe that you can make on a rainy day… which it is today on the Sunshine Coast in Australia. Being on a healthy tour has got me to try new healthy recipes including this one. This recipe is adapted from the original recipe on Gimme Some Oven.

 

 

Here’s what you need

  • 1 cup (dry) oatmeal (I made my own, check out this post on how to make your own oat meal)
  • 2/3 cup toasted coconut flakes
  • 1/2 cup sugar free natual peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup chocolate chips (optional)
  • 1/3 cup honey or stevia
  • 1 Tbsp. chia seeds (optional)
  • 1 tsp. vanilla extract

Here’s how you make them

Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.
